CHOCOLATE CHIP BLONDIE OAT BARS

Hello & Welcome Back!

Since we are now deep into this lovely, cozy season I figured it was time to start sharing some more recipes on here! Though these aren’t the most fall recipe I could make, I assure you those are coming too!

Fair warning: these are VERY sweet & extra delicious served with a scoop of coffee ice cream.

INGREDIENTS:

THE BAR:

– 1.5 cups brown sugar

– 1/2 cup butter

– 2 eggs

– 1 teaspoon vanilla extract

– 1 cup gluten-free all-purpose flour (y’all know the Trader Joes one is my favourite)

– 1/2 cup rolled oats

– 1/2 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup chocolate chip cookies

THE CRUMBLE:

– 1 cup rolled oats

– 3 tablespoons softened butter

– 1/2 cup brown sugar

INSTRUCTIONS:

Using a stand-up mixer mix brown sugar & butter together. After fully combined add eggs and butter. Add flour, oats baking powder & salt then fully combine again. Add in chocolate chips to your liking. Pour mixture into an 8×8 pan that has been greased.

In a separate bowl mix the crumble together. I often find this is easiest to do mixing with my hands. I also find that it’s better to go off what feels right rather than actually measuring it out. I often just guess. Once mixed together (try and keep it flakey not mixed into a ball) pour crumble on top of the bars.

Bake at 350 for 23 minutes
