GLUTEN FREE WHAT I EAT IN A DAY

Hey there! I’ve gotten a bit of feedback lately that y’all wanted some ‘What I Eat In a Day’ posts so I thought I would share the first one with you today. Let me know if you like this and I will be sure to make it a more regular thing!

COFFEE: Coffee is always the first thing I have during a day. Lately I’ve been making iced vanilla lattes the most – I’ve shared the recipe on my past few blog posts!

BREAKFAST: I’m a big breakfast gal & eggs and toast is usually my go to. I’ll mix up the type of eggs on a regular basis but it’s usually along these lines.

LUNCH: I’ve been trying to have salads most days as it’s a bit of a lighter option & a good way to get lots of veggies in. One of my favourites is this sweet kale salad from Costco.

SNACK: I’m a sucker for an afternooon snack. For some reason I often crave chocolate if I’m spending the afternoon studying so I love having these Brookside Chocolate covered blueberries – another Costco find!

DINNER: I’ve been a big fan of making taco bowls for dinner lately. They’re so easy and make the best leftovers, I’ll usually make enough for a couple days. Today’s had: rice, ground beef, lettuce, olives, salsa, corn & cheese.


That is all for today! My meals totally very depending on the day and what I am up to, but this is a pretty typical day for me. I’ll be sure to keep making these as I make some fun new recipes. I’d love to hear what your favourite meals to make are.
