If you have been following along on my instagram lately, you know that I have been participating in all the fall baking. Earlier this week I shared some gluten free pumpkin waffles I had made from a mix, but I got multiple requests to share a recipe, so I decided to create one for you. If you’re looking for a yummy fall brunch recipe, than look no further:
INGREDIENTS:
1 cup gluten free all purpose flour
2 tsp. baking powder
6 tbsp. pumpkin puree
2/3 cup milk
1 egg
1/4 sunflower oil
2 tbsp. brown sugar
1 tsp. pumpkin spice blend
DIRECTIONS:
Start by mixing combining your flour, baking powder and pumpkin spice blend in a bowl. In a separate bowl combine pumpkin puree, milk, egg, sunflower oil & brown sugar. Mix wet and dry ingredients. Use 1/2 cup scoop and pour onto waffle iron (amount will depend on the waffle iron). Cook until waffles begin to brown. Top with butter, syrup, whip & enjoy!
