If you’ve been following along on here for a while now, you would know that I have celiac disease and LOVE coming up with new gluten free recipes. Most of the time I just mix things together and really hope for the best, and then when they work I love to share them on here.
Well as much as I loveeee a normal pancake, a few weeks ago I decided I wanted to try and come up with a bit healthier of an option. I’ve been playing around with the recipe a little bit and I think I’ve finally perfected it. This has become one of my favourite breakfasts to make after the gym!
1/2 scoop vanilla protein powder
1 scoop collagen powder
1/3 cup flour
Sprinkle of salt
I start by warming up a pan with butter in it, then pour all my ingredients into my blender and blend. Once the consistency seems smooth then I pour the mixture into my pan in whatever size pancakes I’m feeling. I flipped mine when the edges were bubbling and they ended up being cooked perfectly.
Top with berries and enjoy!
