I’m back with another recipe today. I shared this super yummy, healthy bowl on my instagram stories last week and y’all wanted the recipe so here it is!
Salt & Peper
I started off by cooking my rice in chicken broth(I use better then bouillon broth and love the flavour it gives). My rice takes about 20 minutes to cook so it made sense to start this first.
While the rice is cooking I start chopping up a thawed chicken breast into small bites, and adding it in a pan with two tablespoons butter. After a few minutes I added about 1/2 tablespoon crushed garlic, and squeeze half a lemon on top. I cooked this on medium heat all the while the rice was cooking (approximately 10 minutes on medium) and then turned it up to high for the last 3-4 minutes to brown the chicken up a little bit.
Once my rice is cooked, I served some in a bowl, topping with chopped cilantro and chopped cherry tomatoes. Add your chicken on top and top with salt & paper and viola! This super recipe is super yummy, super quick (took 20 minutes) and very fresh!
