I was recently tasked with the job of making my friend a cake for the mini celebration we were having during lunch one day. As both would consider being a coffee lover an understatement, it seemed only fitting to make a coffee birthday cake.
Cake Ingredients:
– 4 1/2 cups gluten free all purpose flour (I used the Trader Joe’s option)
– 1 1/2 cups white sugar
– 1 1/2 teaspoon baking soda
– 1 teaspoon baking powder
– 1 cup buttermilk
– 1 cup cooled coffee (strong!)
– 2 large eggs
– 1/4 cup melted butter
– 2 teaspoons vanilla
– dash of almond extract
350 for 25 minutes 6 12cm cake pans
While the cakes are baking, work on the icing ingredients.
Icing Ingredients:
– 2 cups whipping cream
– 1 tub vanilla icing
– Dash of vanilla extract
– 2 tablespoons confectioners sugar
– 1 Starbucks via packet
Icing Instructions: Make the whipped cream by combining whipping cream, confectioners sugar, and vanilla. I personally did this by hand – its quite the arm workout, but it can be done with a standup mixer as well. Once stiff peaks are formed pour coffee packet into the whipping cream and mix together. After completely mixed, add the container of icing to the mixture. I know it seems ridiculous to use store-bought icing for a homemade cake but over the years I have found myself incapable of making a good cake icing.
After letting these bad boys completely cool trim the tops, sandwich 2 mini cakes together with icing in-between and completely cover cake with icing.
I added chocolate covered espresso beans to the top of mine to make it extra cute.
