BREAKFAST OF THE WEEK (SUMMER EDITION)

Breakfast is, has always been, and likely always will be my favourite meal. Today I’m going to share with you my favourite breakfasts to make during the summer. With these ones in particular I love that they keep me full throughout the day but they don’t leave me bloated.

This Week’s Breakfasts:

Monday: Started off the week with a classic for me! Chances are 9/10 days I eat eggs for breakfast, and scrambled are definitely my favourite. On the side I had some Gluten Free toast (Trader Joe’s GF White Bread) with marionberry jam. Jam isn’t usual for me, but it always feels so summer-y for me, and so so delicious!

Tuesday: Hot Cereal is another favourite of mine, I love to top it with coconut sugar and fresh fruit to make it seem seasonal. To make it simmer equal parts water, milk, soy-milk, and Bob’s Redmill Hot Cereal mix. We used 4 cups of each so we had lots of leftovers to heat up. Keep the lid up while simmering and every 10-ish minutes stir until it reaches your desired thickness.

Wednesday: Waffles are easily one of my favourite foods so of course I needed them to get me through hump-day. To make these waffles I used:

3/4 cup Trader Joes GF All-Purpose Flour

1/2 cup coconut flour

3/4 cup water

1/2 cup milk

1 egg

2 tablespoons butter

1 tablespoon baking powder

Once again I used the marionberry jam on top and added blueberries and a dollop of whipped cream. These were so yummy and kept me full all day, in fact with this recipe I even had extra to share!

Thursday: For today I wanted something that was going to keep me full for a long time. I used a Trader Joes GF bagel, covered it with half an avocado (I like to kind of mush it onto the bagel) over-medium fried eggs and topped with smoked salt.

Friday: Because I wanted to start the weekend off right, I opted for a healthy Friday morning option. I used a frozen banana and a frozen acai packet for the base of this bowl, and topped it with blueberries, more banana, homemade granola and coconut shreds.
